Preparation

Step 1

Cook the noodles as per the instructions on the pack.

Step 2

Fry off the chicken breast (if using). When it’s completely cooked through, rest before slicing. Keep warm.

Step 3

Pour the broth into a saucepan and bring to a boil. Add the beansprouts, soybean (and tofu), and bring back to the boil. Then lower the heat.

Step 4

Cook the pak choi in boiling water until soft. Drain and keep aside.

Step 5

Gently lower egg into boiling water for 5 minutes. Remove and place in cold water. Once cool enough to handles, peel shell, cut length-ways and set aside.

Step 6

Start arranging the noodles into 2 bowls. Add pak choi and pour the broth over with the beansprouts, soybean (and tofu).

Step 7

Arrange the egg yolk side up on the top along with your slices of chicken (if using).

Step 8

Finish with sesame oil, soy and sriracha sauce. Top with chopped coriander and spring onion. Serve piping hot.
